Asparagus soup
  • 1 lb asparagus
  • 3 cups chicken broth
  • 4 oz grated sharp cheddar
  • 1 cup heavy cream
  • 2 TBS of flour
  • pepper to taste
  1. cut off the ends and the tips of the asparagus (throw the ends away)
  2. add 3 cups of chicken broth to a pot and bring to a boil, then add asparagus stalks and boil for 10 minutes
  3. Heat a saute pan and add 1 Tbs of olive oil, then add in the asparagus tips
  4. saute until slightly caramelized, then remove from heat
  5. Remove the chicken broth and asparagus stalks from the heat and put into a blender
  6. puree until smooth, then add in 1 cup of heavy cream and blend
  7. bring the mixture back to the stove until it starts simmering
  8. add in 2 tablespoons of flour then whisk
  9. add in cheese and whisk until smooth
  10. Bring the mixture back to a simmer then add in asparagus tips
  11. serve with cheese on top and freshly grated black pepper
