Cheesy Spinach and Chicken

The other day I had a TON of raw spinach left and I really wasn’t sure what I wanted to do with it.  I didn’t want to make a salad because that’s just boring in most cases.  So I looked to see what else was in my fridge and found some chicken and shaved Parmesan cheese.  After a while of pondering, I decided to just throw a dish together and hope for the best.  Boy am I glad I did!  This cheesy spinach and chicken came out so good and it was so simple to make!  Here’s what I did:

Prep:

The first step to making the cheesy spinach chicken is to cut the chicken into long strips and cover them with spices.  To get a well balanced flavor, I used crushed black pepper, garlic powder, onion powder, and salt.  I then rubbed the spices all over the chicken to get an even coat.

Now set the Chicken aside and wash your hands so that you can safely handle the spinach.

Take about 8oz of spinach and roll it together like a sleeping bag, then cut through the spinach every 1/4″. I found this to be the easiest way to cut the spinach and it should give you just about 4 cups of loosely chopped spinach.

Cooking:

In a large frying pan, add 1 tablespoon of olive oil and let it heat up.  Now add about one half of the season chicken and brown it on both sides.  Once the chicken is nice and golden brown on both sides, add in 1 tablespoon of butter and let it melt down and coat chicken.

Now add in about half of the spinach and 1/4 cup of the Parmesan cheese.

Allow the spinach to reduce and mix all of the ingredients together.  Repeat this for the second half of the dish

Serving:

I serve this all by itself because it’s already a complete meal filled with nutrients and it taste so amazing!  Enjoy 🙂

  • 1 lb Chicken Breast
  • 2 TBS olive oil
  • 1 tsp Salt
  • 2 tsp Crush Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 2 TBS butter
  • 4 Cups Chopped spinach
  • ½ Cup Parmesan Flakes
Instructions
  1. Cut the chicken breasts into strips
  2. Coat the strips with the spices
  3. In a large frying pan, heat up the olive oil
  4. Add the chicken and sear on both sides until golden brown
  5. Then add 1 tablespoon of butter and allow it to melt
  6. Add in the spinach and stir the mixture until the spinach reduces significantly
  7. Sprinkle the Parmesan cheese on top of the chicken and spinach
  8. Finally, stir the mixture and allow the cheese to melt
  9. Serve by itself!
